ABOUT THE ROLE
The Salisbury Hotel is seeking a Sous Chef who enjoys leading from the front and takes pride in delivering quality pub food done well. This is a hands-on leadership role, supporting the Head Chef in the day-to-day running of the kitchen while maintaining consistently high food standards.

You’ll love cooking honest, well-executed pub classics — the perfect schnitzel, crisp salt and pepper squid — while also having the confidence to bring fresh ideas to the menu when the moment’s right.

Key responsibilities include:

  • Leading and motivating a small kitchen team
  • Supporting kitchen operations, service delivery, and food quality
  • Maintaining high standards across all sections of the kitchen
  • Monitoring food costs, portion control, waste, and stock levels
  • Ensuring compliance with food safety, allergen management, and WHS requirements
  • Working closely with the Head Chef to deliver a premium and consistent food offering

ABOUT YOU
You’re a calm, capable, and motivated chef who enjoys responsibility and thrives in a team environment. You take pride in your craft, lead by example, and stay composed under pressure.

To succeed in this role, you’ll bring:

  • Trade qualification (minimum Certificate III in Commercial Cookery)
  • At least two years’ experience leading or supervising a kitchen team
  • Strong capability across all kitchen sections
  • Experience with stock ordering, service management, and busy trade
  • Excellent communication skills and a positive, professional attitude
  • A passion for quality food, great service, and continuous improvement
  • Sound knowledge of food trends, technique, presentation, and cost control
  • The ability to work methodically and calmly in a fast-paced environment
